Cuy



Alex's family served us an Ecuadorian specialty: cuy, or guinea pig. According to old indigenous customs in Ecuador, cuy is a sacred animal. It was used anciently as a diagnostic tool in shamanistic rituals and is still revered in many communities. It is a high honor to receive cuy when visiting someone's home.

I was very excited to receive an offering of cuy. I loved the flavor and felt thankful for the honor. We never expected such hospitality and generosity. It was truly a humbling experience.

Alex's mother also prepared potatoes with a delicious spinach sauce. I garnished the plate with spearmint from their garden.
