Cooked Camas


When we opened the pit oven the other day, most of the camas was still uncooked, or under-cooked. It's a lot of work to dig, clean, prepare, and bake camas, so we decided we had to do something to rescue our Indian food. Since it was under-cooked, we decided to take it all home and finish it in a crock pot. Actually, I learned to cook camas in a crock pot years before I ever tried pit baking. In any case, we were finally able to get the camas to a nice chocolate brown color. Beautiful. 

We hope to bake again soon and make some critical adjustments to the process. We'll get it right eventually.
