Cow Parsnip

As I continue to learn indigenous plants, cow parsnip has come to my attention. I'm still not too sure about its medicinal use, but local tribes sometimes peel the tender shoots in spring and eat them like a salad green. However, later in the year, the plant produces a toxic chemical that may cause dermatitis in some individuals. It's amazing that plants have such different effects, depending on the season or time of harvest.
